Method
- To make the dressing: Place all salad dressing ingredients in a jar, put the lid on, and shake vigorously. Set aside.
- To make the salad: Drizzle the bottom of a large salad bowl with half of the dressing. Add the kale and toss to coat all leaves.
- Add the sliced apple, figs, pomegranate arils, and pecans. Drizzle with the rest of the dressing and toss gently.
- Top with the cheese and serve immediately.
Notes
This salad is designed to be made just before serving to maintain the crispness of the ingredients. The dressing can be made ahead of time.
