- Preheat your oven to 375°F (190°C).
- Season the pork chops with salt and pepper. Set them aside.
- In a bowl, combine the melted butter, rosemary, thyme, parsley, and garlic. Mix well and set aside.
- Add olive oil to a large cast iron skillet or oven-safe skillet. Heat over medium-high heat until hot and shimmering. Add the seasoned pork chops and sear for about 4 minutes on each side until golden brown. If you need to cook them in batches, remove the chops, add a little more oil if needed, and continue searing.
- Once all pork chops are seared, return them to the skillet. Generously coat each pork chop with the garlic and herb butter mixture.
- Bake in the skillet in the preheated oven for 10-15 minutes, turning them halfway through, until cooked through.
- Remove from the oven. Serve warm with any remaining garlic and herb butter and a sprinkle of fresh herbs.
Notes
These pork chops are delicious served with roasted vegetables or a simple salad.
