Simple Garlic Herb Pork Chops

These simple garlic herb pork chops are packed with flavor and easy to make for a weeknight meal. A quick sear and a bake in the oven with a flavorful herb butter make these chops a family favorite.

Ingredients
  

  • 4-5 Boneless Pork Chops roughly 1.5 pounds
  • 2 tablespoons Fresh Rosemary finely chopped
  • 1 tablespoon Fresh Thyme finely chopped
  • 1 tablespoon Fresh Parsley finely chopped
  • 3 large cloves Garlic finely grated or minced
  • 1/2 cup Butter or dairy free substitute melted
  • 1-2 tablespoons Olive Oil for searing
  • Salt and Pepper to taste

  • Oven
  • Cast iron skillet
  • Bowl

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork chops with salt and pepper. Set them aside.
  3. In a bowl, combine the melted butter, rosemary, thyme, parsley, and garlic. Mix well and set aside.
  4. Add olive oil to a large cast iron skillet or oven-safe skillet. Heat over medium-high heat until hot and shimmering. Add the seasoned pork chops and sear for about 4 minutes on each side until golden brown. If you need to cook them in batches, remove the chops, add a little more oil if needed, and continue searing.
  5. Once all pork chops are seared, return them to the skillet. Generously coat each pork chop with the garlic and herb butter mixture.
  6. Bake in the skillet in the preheated oven for 10-15 minutes, turning them halfway through, until cooked through.
  7. Remove from the oven. Serve warm with any remaining garlic and herb butter and a sprinkle of fresh herbs.

Notes

These pork chops are delicious served with roasted vegetables or a simple salad.
