From Scratch Pork Chops With Herb Butter

Ingredients
  

For the Pork Chops
  • 4 boneless or bone-in pork chops
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • to taste salt
  • to taste pepper
For the Herb Butter
  • 4 tbsp salted butter melted
  • 1 tsp fresh rosemary finely chopped
  • 1 tbsp fresh thyme finely chopped
  • 1 tbsp fresh flat leaf Italian parsley finely chopped
  • 1 tbsp fresh chives finely chopped

Method
 

  1. Melt the butter in a microwave or on the stovetop. Add the chopped herbs and stir to combine. Set aside.
  2. Heat a large, heavy-bottomed skillet with a fitted lid over medium-high heat. Add the olive oil.
  3. Season the pork chops on both sides with garlic powder, salt, and pepper. Be mindful of the salt, as the herb butter also contains salt.
  4. Place the seasoned pork chops in the hot skillet. Sear the first side for 5 minutes.
  5. Flip the pork chops, put the lid on the skillet, and cook for another 5 minutes.
  6. Remove the lid. Place one spoonful of the prepared herb butter on top of each pork chop. Turn the heat down to medium-low, replace the lid, and cook for an additional 5 minutes.
  7. To check for doneness, use a meat thermometer. The internal temperature should register 135°F (57°C).
  8. Remove the pork chops from the skillet and let them rest for 5 minutes before serving.
