Method
 

  1. About 20-30 minutes before baking, take the pork chops out of the refrigerator and let them sit at room temperature.
  2. Preheat your oven to 400°F (200°C). Prepare a 9x13-inch baking dish or a rimmed baking sheet lined with foil. Spray it with non-stick cooking spray or coat lightly with olive oil.
  3. In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and pepper.
  4. Pat the pork chops dry with paper towels. Sprinkle the dry rub evenly over both sides of the chops. Gently rub it in with your fingers.
  5. Place the seasoned pork chops in the prepared baking dish or on the baking sheet. Drizzle the remaining olive oil over the tops of the chops.
  6. Bake for 15-25 minutes. The exact time depends on if you are cooking bone-in or boneless chops and how thick they are. Start checking around 10-12 minutes if your pork chops are thinner. In the last 2-3 minutes of baking, turn the broiler on high to make the edges crisp and the top golden.
  7. Remove the pork chops from the oven once the internal temperature reaches 145°F (63°C) on a digital meat thermometer. Let them rest for at least 3-5 minutes before serving. Serve with mashed potatoes and your favorite side dishes.
