Ingredients
  

For the Cookies
  • 1/2 cup butter softened
  • 1 cup packed brown sugar
  • 1 large egg beaten, room temperature
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and packed brown sugar until smooth.
  3. Add the beaten egg and vanilla extract to the butter and sugar mixture. Beat well until combined.
  4. In a separate bowl, combine the all-purpose flour, baking soda, cream of tartar, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, stir in the chopped walnuts.
  6. On a lightly floured surface, shape the dough into three logs, each about 10 inches long and 1 inch in diameter.
  7. Tightly wrap each dough log in waxed paper. Freeze for at least 12 hours, or until firm.
  8. When ready to bake, preheat your oven to 350°F (175°C). Grease your baking sheets.
  9. Remove the dough logs from the freezer. Slice each log into 3/8-inch thick cookies.
  10. Place the cookie slices onto the prepared baking sheets.
  11. Bake for 6 to 8 minutes, or until the edges are lightly golden.
  12. Remove the cookies from the baking sheets and transfer them to a wire rack to cool completely.

Notes

These cookies can be made ahead and frozen. Slice and bake as needed for a quick homemade treat.
