Method
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and packed brown sugar until smooth.
- Add the beaten egg and vanilla extract to the butter and sugar mixture. Beat well until combined.
- In a separate bowl, combine the all-purpose flour, baking soda, cream of tartar, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, stir in the chopped walnuts.
- On a lightly floured surface, shape the dough into three logs, each about 10 inches long and 1 inch in diameter.
- Tightly wrap each dough log in waxed paper. Freeze for at least 12 hours, or until firm.
- When ready to bake, preheat your oven to 350°F (175°C). Grease your baking sheets.
- Remove the dough logs from the freezer. Slice each log into 3/8-inch thick cookies.
- Place the cookie slices onto the prepared baking sheets.
- Bake for 6 to 8 minutes, or until the edges are lightly golden.
- Remove the cookies from the baking sheets and transfer them to a wire rack to cool completely.
Notes
These cookies can be made ahead and frozen. Slice and bake as needed for a quick homemade treat.
